  • 1 bunch of broccoli
  • 1 head of cauliflower
  • 8 bacon strips
  • 1 cup seeded tomatoes
  • 1/3 cup onion
  • 2 hard boiled eggs
  • 1 cup mayonnaise
  • 1/3 cup sugar
  • 2 teaspoons cider vinegar
  • 1/2 cup shredded cheddar cheese
  1. Step 1

    If you are looking for a colorful salad that is perfect for the summertime this is the salad for you. It takes little time to make and has vegetables that you can grow in your garden. You need one bunch of broccoli that you will need to separate into florets. You will need one head of cabbage that you will also need to cut into florets. You will need to cook 8 slices of bacon until crispy. Then you will need to crumble the bacon into small pieces. I speed this process up by using the microwave bacon. You will need one cup of seeded tomatoes. I have also used the cherry tomatoes. You can choose. You will need to dice a medium onion. You will add 1/3 cup of onion. I normally add whatever is leftover but everyone in our house likes onions. You will need to hard boil to eggs. Let them cool completely and dice into small pieces.

    Then in a large bowl you will combine the broccoli, cauliflower, bacon, tomatoes, onion, and egg. Then set the bowl to the side. In another bowl you will combine the 1 cup of mayonnaise, 1/3 cup of sugar, and 2 tablespoons of cider vinegar. Mix together thoroughly. You do not want to add the dressing until you are ready to serve. Store the salad and dressing in the refrigerator until ready to use. When you are ready to serve you will need to pour the dressing over the salad and toss until all the vegetables are lightly covered with the dressing. Then sprinkle with your cheddar cheese.

    Now your salad is ready to serve. It is time to enjoy. This is a quick and easy recipe. This puts a different spin on the everyday salad. It is good to have change sometimes. You do not only have a delicious salad it is also very colorful.
