Things You'll Need:
- 1 1b. chorizo sausage
- 6 large eggs
- 1 tsp. jalapeño pepper (diced)
- 1 Tbsp. onion (finely chopped)
- 2 cloves garlic (crushed)
- Pico de Gallo or your choice of salsa
- corn tortillas

Step 1
In a small mixing bowl, scramble eggs and set aside.

Remove chorizo from its casing and begin to heat over a medium flame. Add jalapeño pepper, onion and garlic. Scramble for about five minutes. You may choose to drain any excess fatty oil.

Pour egg mixture over chorizo. Continue scrambling until eggs are just about firmly set. Remove from flame.

To heat tortillas: place a tortilla on the grill plate of one of the eyes of your stove top over a low flame. Allow to slightly brown (about 15 seconds) then turn to the other side. Do this for each tortilla. Alternatively you can bake them in the oven while you are cooking the chorizo con huevos.
Serve heated tortillas alongside the chorizo con huevos and the pico de gallo or your choice of salsa. You can also serve with rice and refried beans or mashed avocado.
