How to Make a Fresh Strawberry Pie

The seasons best berries are now in season so what better way to showcase these precious rubies of summer then in a scrumptious pie. Does this Spark an idea?

  • Fresh Strawberries
  • Pie Crust
  • ¼ cup Sugar
  • ¼ cup strawberry jam
  • 1 teaspoon Lemon Juice

Instructions

      Preheat oven at 350 degrees

      Prepare pie crust or you can use a store brought crust. With a fork make several small pokes around the base of the crust.

      Place another pie plate on top of the pie crust and fill with a small bit of water or dry beans. To add a bit of weight to the top plate. This plate is going to keep your crust in place and help prevent it from bubbling.

      Bake for 10 minutes

      Remove from oven and remove the top pie plate.

      Return crust to oven and bake for an additional 5 minutes.

      Clean and wash your strawberries removing stems and leaves allow to dry.

      In a small kettle add ¼ cup Sugar, ¼ cup strawberry jam, 1 teaspoon Lemon Juice, 1 tsp water. Stir constantly until liquid comes to a rapid boil.

      Align your strawberries in the pie shell. Pour glazing liquid over strawberries.

      Refrigerate pie for about an hour.

      Serve with whipped cream and enjoy summer

Tips & Warnings

  • Beside big bold strawberries crowning the pie I like to dice several smaller berries up and align the bottom of the crust with berries this way every bite will be delicious.
