Charcoal gives a great flavor and sears the outside of the chicken.

This easy recipe calls for grilling chicken legs over charcoal. Barbecue sauce is optional -- the legs will come out juicy and tasty with or without it.

  • Chicken legs
  • Oil
  • Chicken spice rub
  • Barbecue sauce (optional)

      Prepare and light the coals; once they're hot, gather them on one side of the grill in a large pile.

      Place the chicken legs into a large container while the coals are heating. Add 1-2 tbsp. of oil -- olive or vegetable oil, whichever you prefer.

      Add the chicken spice rub or any of your favorite seasonings to the oil. Add the chicken legs to the mix and coat them well.

      Place the chicken above the hot coals on the grill. Cover the grill.

      Grill the legs for 25 minutes. If you are going to add sauce, coat the legs and flip them over, then coat the other side.

      Cover your grill again and give the chicken another 25 minutes.

      Check the temperature of the chicken; it should be at least 165 degrees. Allow it to cook a little longer if it's not quite done.

Tips & Warnings

  • When working with raw chicken be sure to wash your cooking area thoroughly with soap and water to avoid the spread of salmonella.
