Scallop Ceviche with Avocado
Scallop Ceviche with Avocado

Ceviche is a citrus marinade. This delicious summer meal will keep you asking for more!

Difficulty: Easy
Instructions
  1. Step 1

    Ingredients:

    1 pound Sea Scallops (you can use mini scallops as well)
    1/2 c. fresh Lime Juice
    1/2 c. Fresh Lemon Juice
    1/4 c. White Wine
    1 large Avocado
    1/4 c. chopped chives
    1/4 c. extra virgin olive oil
    1/4 c. sweet pepper
    1/4 c. chopped red onion
    2 stalks chopped celery
    1/4 c. chopped cilantro
    Sea Salt & pepper

  2. Step 2
    Combine scallops and ceviche and freshly chopped vegtables.
     
    Combine scallops and ceviche and freshly chopped vegtables.

    Prepare:

    Combine the lime juice, lemon juice, white wine, olive oil, scallops and sea salt. Marinade in refrigerator for 4 -6 hours.
    Chop your sweet pepper, red onion, celery, and cilantro. Mix together.
    Now slice your avocado in large slices and set aside.

  3. Step 3
    Serve and enjoy!

    Serving:

    On a serving plate, place large leaf lettuce around the plate. Scoop your freshly chopped vegetable on the lettuce leaves. Top with scallops, then avocado. Garnish with chopped chives and drizzle with some fresh lemon juice and a drizzle of white wine. Add sea salt and pepper to your taste.
    I serve this meal with Poema Extra Dry white wine. The citrus taste in the wine brings out the flavors in your ceviche dish.
