How to Make Frothy Pink Lemonade Summertime Pie

Here are the instructions to make a delicious, and pretty in pink, summertime dessert. I leaned this one long ago and added my own special touches over the years. Have even served it as a birthday cake/pie...Delightful on a summer evening and excellent to cleanse the palate after a grilled meal...Everyone will want the recipe!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Iced lemon cookies 1 pkg crushed
  • Frozen pink lemonade 1 lg can
  • Whipping cream 1 pint whipped
  • Condensed milk 1/2 can
  • Pie plate, preferably glass or ceramic.
  • Fresh raspberries (optional)
  1. Step 1

    Crush the frosted lemon cookies and place in the pie dish. Tamp down cookie crumbs on bottom and sides of dish with spoon or smooth bottomed glass to create the no-bake crust for pie.

  2. Step 2

    Whip the whipping cream into peaks in a chilled bowl. Set aside to do next step.

  3. Step 3

    In largish bowl mix together - the frozen lemonade (no water), and half the small can of condensed milk (optional really). Then fold in the whipped cream till all ingredients are blended well and mixture is fluffy.

  4. Step 4

    Pour the pretty frothy pink mixture onto crust in pie plate. Chill pie well before serving; 1-2 hours to individual taste.

Tips & Warnings
  • Garnish with fresh raspberries for a super delicious treat!!
  • Great after a cook-out, steaks, BBQ!
  • Cut small slices ... intense taste!
  • Can be habit forming! :-)
