How to Prepare a Roaster Pig

The preparation of a pig before it goes in a roaster, on a barbecue spit or on the grill is very important to the overall flavor of the pork. Be creative and stuff it with some vegetables or stuffing, and rub it down in herbs and seasonings. It is also important to make sure that the pig is very clean before preparing it for consumption.

Things You'll Need:

  • Soft scrub brush
  • Salt and pepper
  • Aluminum foil
  • Desired seasonings
  • Apple or wood blocks
  • Stuffing, chopped vegetables, etc.
  1. Step 1

    Wash the pig completely as best you can, from the inside out. Put on gloves and use a soft scrub brush on the flesh, moving in circular motions lightly across the body. Remove any extra tissue from the inside of the pig.

  2. Step 2

    Massage a mixture of seasonings to the skin of the pig. Use generous amounts of salt, pepper and garlic mixed in olive oil (if you want crispier roast pork) and experiment with other herbs such as rosemary, thyme or peppercorns. Use a lot of herbs and seasonings, as in the end, using more is better than wishing you put more on!

  3. Step 3

    Fill up the empty pig with dressing, chopped vegetables or wood chips (if you want a smokier flavor). This will help prevent the roasting pig from collapsing, and it will also provide more flavor and side dishes.

  4. Step 4

    Place a block of wood or an apple in the pig's mouth before roasting. This helps heat escape from the pig.

  5. Step 5

    Tie the front legs together near the bottom of the mouth. Take the back legs and bring them up front so it looks like the pig is lying down. Tie the back legs together toward the middle of the belly.

  6. Step 6

    Cover the ears and tail in foil to prevent burning.
