    • 8 tablespoons softened butter
    • 1/2 cup vegetable shortening
    • 1 tablespoon baking powder
    • 2 cups granulated sugar
    • 3/4 teaspoon salt
    • 2 1/2 teaspoons vanilla extract
    • 2 teaspoons almond extract
    • 5 large egg whites
    • 2 1/4 cups Bob's All Purpose Gluten-Free Flour
    • 1/2 cup fava and garbanzo flour
    • 1 1/4 cup milk
    • 3 teaspoons xanthan gum

        Preheat the oven to 350 degrees Fahrenheit. Grease and flour two 8-inch round cake pans using a gluten-free flour of your choice. One flour you can use is tapioca.

        In a large mixing bowl, cream together the butter, shortening, baking powder, sugar, salt and extracts until fluffy and light. Add the egg whites to the butter mixture one at a time, beating well after each addition.

        Sift together the flours and xanthan gum. Add half of the flour mixture to the creamed mixture, then half of the milk. Add the remaining flour and milk, mixing until well blended.

        Pour into the greased and floured cake pans and bake until golden brown and a toothpick inserted in the middle comes out clean, about 40 minutes.

        Allow the cakes to cool and then frost.
