How to Make Gluten-Free White Cake

I altered my favorite white cake recipe to make this wonderful gluten-free white cake. Yummy! Could be used for a wedding cake!

Instructions

Things You'll Need:

  • 8 tablespoons softened butter
  • ½ cup vegetable shortening
  • 1 tablespoon baking powder
  • 2 cups granulated sugar
  • ¾ teaspoon salt
  • 2 ½ teaspoons vanilla extract
  • 2 teaspoons almond extract
  • 5 large egg whites
  • 2 ¼ cups Bob's All Purpose Gluten-Free Flour
  • ½ cup Fava and Garbanzo Flour
  • 1 ¼ cup milk
  • 3 teaspoons xanthan gum
  1. Step 1

    Gather the following ingredients:

    8 tablespoons softened butter

    ½ cup vegetable shortening

    1 tablespoon baking powder

    2 cups granulated sugar

    ¾ teaspoon salt

    2 ½ teaspoons vanilla extract

    2 teaspoons almond extract

    5 large egg whites

    2 ¼ cups Bob's All Purpose Gluten-Free Flour

    ½ cup Fava and Garbanzo Flour

    1 ¼ cup milk

    3 teaspoons xanthan gum

  2. Step 2

    Preheat the oven to 350 degrees Fahrenheit. Grease and flour two 8-inch round cake pans using a gluten free flour of your choice. Tapioca is what I use.

  3. Step 3

    In a large mixing bowl, cream together the butter, shortening, baking powder, sugar, salt and extracts until fluffy and light. Add the egg whites to the butter mixture one at a time, beating well after each addition.

  4. Step 4

    Sift together the flours and xanthan gum. Add one- half of the flour mixture to the creamed mixture, then half of the milk. Add the remaining flour and milk mixing until well blended.

  5. Step 5

    Pour into a greased and floured cake pan and bake until golden brown and toothpick inserted in the middle comes out clean. About 40 minutes. Frost with the frosting of your choice and enjoy!
