If you want edible ginger, you will need to look for an edible variety, such as Zingiber officinale. Instructions

    • 1

Fill a pot that is at least 12 inches wide with a rich potting soil. No additional fertilizers for the soil are required.

    • 2

Plant the ginger rhizome an inch below the surface of the soil, and cover it loosely with potting soil. Water thoroughly.

    • 3

Place the pot in a warm, sunny window. You can cover it with a plastic bag to help trap the warmth and keep the water from evaporating too quickly. Keep the soil exceedingly moist.

    • 4

Remove the plastic bag once the ginger has sprouted, if applicable. Move the plant outdoors once the danger of frost has passed and the nighttime temperatures are consistently 50 degrees Fahrenheit or higher. Place it where it will receive at least four hours of sunlight a day.

    • 5

Continue to water the ginger thoroughly throughout the summer months. Ginger requires a lot of water to grow, so do not allow the soil to dry out.

    • 6

When autumn arrives, allow the soil to begin to dry out, watering only every few days. Once the plant begins to produce brown leaves and goes dormant, bring it inside. Water it every few days until spring so that the soil is slightly moist but not exceedingly wet.

    • 7

Harvest ginger in the fall after the leaves have died down while the plant is going dormant. Harvest only if the plant has been growing for at least four months. Leave the main rhizome from which the plant is growing so that your plant can continue to produce the next season.

Tips & Warnings

  • Divide the rhizomes in the spring before it starts growing again. Ginger root found in the produce section can be used to start your ginger plant. Plant fresh ginger root that is not dried out. If the root is good enough for cooking, it will also be good enough for planting.

  • Never allow the soil to dry out during the growing season.
