Things You'll Need:
- 4 cups fresh tomatoes or 1 large can skinless tomatoes
- 1 pepper, 1 small red onion, 2 cloves garlic
- 4 tablespoons olive oil
- 1 skinned, seeded cucumber
- food processor or good blender
- fresh soft herbs (parsley, basil, or chervil)
- lime juice

Step 1
Tomatoes, an excellent source of vitamins, nutrients, and low calorie.First, gather all of your ingredients. In boiling water blanch the tomatoes for 60 seconds. Remove, skin, quarter, and de-seed. If you wish, canned whole skinned tomatoes can be used instead of fresh tomatoes. Put tomatoes in processor or blender. Make sure tomatoes are chilled briefly by placing in refrigerator.

Cucumbers, peppers, tomatoes...Skin and seed cucumber. Put half cucumber in the processor. Add two cloves chopped garlic to the tomato mix as well as half chopped onion. Seed green or red pepper, cut into pieces and place in process. Blend until slightly coarse. Add 2 tablespoons olive oil, tablespoon lime juice (or lemon) or juice from 1 squeezed lime.

Add few ice cubes to processor, pulse mixture briefly, pour into bowls. Chop other half of cucumber, onion, use as garnish. Additionally, add chopped fresh soft herb such as parsley or basil as a garnish. Serve and enjoy!
