How to make French toast with Berry Compote

This combination of buttery Brioche and scrumptious fresh fruit is to die for. Fast and easy to make you'll never believe something so complex could be made so quick.

Instructions

Things You'll Need:

  • 1 pint of raspberries
  • 1 pint of blueberries
  • 1 pint of black berries
  • 1 tbs water
  • 1/2 cup lite cream
  • 1 tsp cinnamon
  • 6 large eggs beaten
  • 1 loaf of Brioche sliced thick
  • 1 Tbs butter for the griddle
  • 1/4 sugar
  1. Step 1

    Preheat the oven to 225 deg. In a medium sauce pan, combine berries with water and 1/4 cup of sugar. Bring to a simmer over moderate heat. This takes about 8 minutes to cook and for the sugar to dissolve. Make sure you stir it occasioanly so that sugar doesn't clump up.

  2. Step 2

    In a large bowl, whisk eggs, a bit of sugar and the lite cream together.
    Add in a bit of cinnamon too.

  3. Step 3

    Transfer to a deep backing dish. You will use this to dip each slice of Brioche in.

  4. Step 4

    Heat a large griddle over medium heat, pat butter onto the griddle as well. Working in batches begin to dip slices into egg and cream and then onto the hot griddle. Allow to brown on both sides. Take each slice out and place onto a serving platters.

  5. Step 5

    Now top with berries and dig in!
