How to Infuse Olive Oil With Herbs

You have probably seen bottles of herb-infused olive oil in the kitchen specialty stores. Beautifully designed glass bottles of oil make great gifts and the flavors add a special touch to any meal. Do not pay high prices for those special oils. Do it yourself. Make several infusions trying different herbs and herb combinations.

Instructions

Things You'll Need:

  • Extra virgin olive oil
  • Decorative glass bottles
  • Corks for bottles
  • Small plastic funnel
  • Fresh herbs
  • Chopping block
  • Knife
  • Twine
  • Scissors
  • Gift tags
  • Pen
  1. Step 1

    Prepare your glass bottles. Check each for cleanliness. You want clean bottles that have proper lids. You can use screw caps but you may get a metallic tang to your oil. Double-check that you have corks of the proper size to use as stoppers for your bottles.

  2. Step 2

    Clean and dry all the herbs. Use paper towels or a clean kitchen towel to pat the herbs completely dry. You may want to lay them flat and let them air dry for a bit before moving on to the next step. Separate the herbs into different piles.

  3. Step 3

    Use a cutting board to prepare the herbs. Cut off any bad spots or tough stems from the herbs. For an extra blast of flavor in your oil, slice some of the leaves of the herbs to release their aromas. This will give your herb-infused olive oil more of a robust flavor. If using garlic, remove the skins.

  4. Step 4

    Tuck the herbs or herb combinations into the bottles. Don't overstuff. Make sure the herbs fit in the bottles easily and are not hanging out over the edge. Just use a few sprigs will do.

  5. Step 5

    Insert the funnel into the top of the glass bottle. Slowly pour the extra virgin olive oil into the bottle with the herbs. Fill until it's about an inch from the top. Wipe any excess oil from the spout of the herb bottle and add the cork.

  6. Step 6

    With your twine and gift tags add a label to your herb-infused olive oil. This will make it easy to identify later when you use it for cooking or decide to give the bottle as a gift. Let your herb-infused olive oils sit in their bottles for about a week before using.

Tips & Warnings
  • Use fresh herbs. You'll get more flavor in your oil than if you used dried herbs.
  • Bottles need to be moisture-free before adding oils. Extra moisture and condensation could cause mold growth.
