Looking for a super healthy, light, and refreshing summer meal? This pasta sauce is as healthy as it gets plus its a thousand times easier than making a traditional marinara sauce. Great for the summer since you won't need to turn on the stove! The fresh basil and sun-dried tomatoes give this marinara sauce a wonderful sweet flavor that you won't be able to get enough of! Enjoy!

Instructions

Things You'll Need:

  1. Step 1

    Measure out the following ingredients:
    4 tomatoes, halved
    ½ red pepper
    ¼ cup sundried tomatoes (soaked, if necessary)
    ¼ cup olive oil
    ½ cup packed fresh basil
    2 cloves garlic
    celtic sea salt and pepper to taste

  2. Step 2

    Throw all the ingredients together into a food processor. Process until smooth.

    That's it! No need to cook for hours!

  3. Step 3

    Serve this sauce on top of noodles made from vegetables like zucchini or spaghetti squash. Veggie noodles are made easily with a mandolin using an attachment with teeth-like grooves. You can also use a spiralizer/spiral slicer to get veggie noodles but mandolins are a bit easier to find.

    You can also serve this as a chilled soup! You may want to water it down a little bit, but its so tasty you may find yourself eating it by the spoonful as is!

  • Use fresh tomatoes and basil for optimal flavor!
