How to Make A Simple Meal with Leftover Chicken

This is a quick and easy meal to get rid of that darn leftover chicken. I tend to use leftover rotisserie chicken chunks, but any off-the-bone, cooked chicken should work. It will probably take less than 15 minutes to prepare and cook.

Instructions

Things You'll Need:

  • 1 cup green bell pepper, chopped
  • 1/2 cup yellow onion, diced
  • 2 Tbsp butter
  • 1 can condensed cream of chicken
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1-2 cups chicken
  • salt, pepper, garlic powder
  • noodles
  1. Step 1

    Start cooking the base of the dish to your liking. I tend to use kluski or egg noodles, but any noodle or white rice should be fine.

  2. Step 2

    While the base is cooking, in a 10-12 inch pan and over medium heat, cook onions and green peppers in butter. Cook until the peppers and onions soften, not until they brown. Do not drain. The butter will add some interesting flavors to the dish.

  3. Step 3

    Add remaining ingredients (soup, broth, milk, chicken) to the pan and simmer on med-low heat for 10-12 minutes, enough time to heat the chicken and let the flavors mingle together a little.

  4. Step 4

    Add salt, pepper, and garlic powder to taste. The chicken soup and broth will probably already have a good bit of salt, so make sure you taste first. It might not need any additional.

  5. Step 5

    And it's done! How simple. Serve over noodles or rice and enjoy the compliments your family gives you on the wonderful dinner.
