How to Stretch Any Main Dish With Zucchini

A side dish or a main course, you can add more volume and stretch a dish by adding some finely shredded zucchini. Most people will not even notice unless you bring it up. I have used this method to turn a meal for four into a meal for six on more than one occasion. I have even added zucchini to banana bread and cakes, and even meatloaf. Battered and deep fried with a ranch dip they are delish ! My grandkids ate in in spaghetti sauce before they realized I add added 2 cups of very finely shredded zucchini to their meal. Even my husband thought the sauce was thick and delicious. Just wash it really well but don't peel it.

Instructions

Things You'll Need:

  • Your meal plan
  • zucchini
  • imagination
  1. Step 1

    Make your meal the way you usually would. especially if it involves a sauce. But even without a sauce you can sneak it in. After your sauce or meal is near the end you add the finely shredded zucchini. The finer the shred the faster it cooks.

  2. Step 2

    If you batter and fry zucchini strips they will eat it anyway because it is fried with a batter.

  3. Step 3

    Make a dip or sauce to cover it with or include it in and just serve it and start eating.

Tips & Warnings
  • Do not tell them ahead of time that you have added this yummy vegetable. Let them find out it won't kill them on their own.
  • Then you can sneak in eggplant and other veggies later.
  • Do not have the zucchini as the main ingredient unless the people you are serving like zucchini. But you can substitute the zucchinni for the meat in vegetarian sauce.
  • Always add it to a meat sauce they have had before
  • Or a veggie sauce or dish they are used to.
