Tofu, also called bean curd is made by coagulating soy milk from soybeans. Tofu is made in a way similar to making cheese from goat or cow milk. Tofu contains iron, protein, calcium, magnesium, has no cholesterol and is low in calories. Because of its properties, tofu is a good substitute for meat products.

Tofu has very little or no flavor on its own. As such, tofu can be prepared and added to almost any dishes. The use of soy sauce in this soup recipe is a good example balancing the otherwise bland tofu flavor.

A wide variety of tofu is available in most supermarkets.

Instructions

Things You'll Need:

  • 4 cups vegetable broth
  • 2 cups water
  • 2 cups small broccoli florets
  • 1/2 chopped green onions
  • 2 cups sliced shiitake mushroom
  • 1 tablespoon soy sauce
  • 1 teaspoon dark sesame oil
  • 1/6 teaspoon ground ginger
  • 10 ounces (about 1/2 package) firm tofu, cut into 1" cubes
  • 4 lime wedges
  • 1/4 cup cilantro leaves
  1. Step 1

    Combine broccoli, mushrooms, water, soy sauce, powder ginger, sesame oil, water and vegetable broth in a pot.

  2. Step 2

    Bring to a boil over high heat. Cover and cook for 3 to 4 minutes. Stir occasionally.

  3. Step 3

    Add tofu, green onions. Cover and cook for another 2 minutes or until tofu is heated through.

  4. Step 4

    Ladel and divide soup among 4 serving bowls. Garnish with cilantro leaves on top. Squeeze some lime juice to the soup if desired. Enjoy hot.
