Make a Pineapple Upside-Down Cake From Scratch

Pineapple upside-down cake is a classic and favorite of many. Highly decorative and delicious, it's always a winner.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/2 cup of melted butter
  • 1 can of crushed or sliced pineapple 14oz
  • 2 cups of cake flour
  • 2 cups of sugar
  • 3/4 cup + 1 tablespoon of hot milk
  • 1 1/2 cup of brown sugar
  • 1 small can of maraschino cherries, halved
  • 5 eggs
  • 1 tablespoon of lemon juice
  1. Step 1

    Preheat oven at 350 degrees Fahrenheit while mixing the cake.

  2. Step 2

    Take an 8 X 12 rectangle pan or round equivalent and pour the melted butter into it.

  3. Step 3

    Sprinkle the bottom of the pan with the brown sugar.

  4. Step 4

    Place the pineapples in the pan. If using the crushed pineapple try to spread it out evenly. If using sliced pineapples, try to arrange them in a uniformed manner.

  5. Step 5

    Now place the cherries in an orderly fashion into the pineapples. The cherries look very pretty in the middles of pineapple slices. If you prefer, the cherries can be omitted all together.

  6. Step 6

    Sift the flour and baking powder together 3 times, set aside.

  7. Step 7

    Beat the eggs for 5 minutes at a medium speed. They should appear thick and fluffy.

  8. Step 8

    Gradually add the sugar while beating it in with the eggs. Then add in the lemon juice.

  9. Step 9

    Fold in the flour and baking soda mixture while gradually adding the hot milk.

  10. Step 10

    Once the cake batter is blended well and smooth, pour it over the fruit inside the pan.

  11. Step 11

    Bake at 350 degrees Fahrenheit for about 45 minutes.

  12. Step 12

    Turn over onto a dish while still warm.
