Step 1
"I'm here to work." This worked for me. Somewhere along the line they'll ask you how you feel about hours and shifts and what works for you. Tell them "Well, I'm here to work. I'll take what you have." And then later, when they again give you an option, just throw in your preferences then, once they like you.

Step 2
Toot your own horn. Tell them what you're good at and don't act like you're "kinda" good at it. Act like you're able to do the job. Even if you're a little rusty at whatever it is, they'll be patient with you, usually. The learning process of the job usually is more important than what you knew before the job, so it's not that important what you know prior to the job.

Step 3
Tell them you can help them be better. Somehow integrate something you're good at and how it could be used at the workplace. Even if it's fast food, you could say this: "I used to clean my Uncle's garage all the time, cleaning the floor here will be easy compared to that, I'll be able to do it in half the time than what you expect."
Let them know that you've done things before. It's not attractive to be naive and unknowing. Just make sure you look and sound like you know how to do things.
