This unique recipe is a great way to spice up rhubarb. Rhubarb cake is less commonly heard of than rhubarb pie. Provoke someone's curiosity at the next potluck!

Instructions

Things You'll Need:

  • 2 cups of diced rhubarb
  • 1 1/2 cup of sugar
  • 1 teaspoon of vanilla
  • 1 cup of all purpose flour
  • 1 teaspoon of cinnamon
  • 1/2 cup of sugar
  • 1/2 cup of shortening
  • 1 cup of buttermilk
  • 1 teaspoon of baking soda
  • enough cinnamon and sugar to sprinkle on top
  1. Step 1

    Preheat the oven to 350 degrees Fahrenheit while preparing the cake.

  2. Step 2

    In a medium size bowl combine 1/2 cup of sugar together with the 2 cups of rhubarb. Allow it to set for 15 minutes.

  3. Step 3

    Mix the remaining sugar (1 1/2 cup), shortening, vanilla and buttermilk in a large mixing bowl.

  4. Step 4

    Now stir in the flour, baking soda and cinnamon to the mixture in the large mixing bowl.

  5. Step 5

    Fold in the rhubarb and sugar into the cake batter.

  6. Step 6

    Pour the cake batter into a greased and flour pan. I normally use a round pan, like one for coffee cakes and pineapple upside down cakes.

  7. Step 7

    Bake until done at 350 degrees Fahrenheit. This will be about 25 minutes or until a toothpick comes out of the center clean. Adjust the cooking times with your oven and altitude.

  8. Step 8

    After removing the cake from the oven, sprinkle the top with cinnamon and sugar.
