Things You'll Need:
- 1 potato per person
- 4 plum tomatoes
- 1 med red onion
- 1/2 cup oil
- 1/4 cup vinegar

Step 1
The first thing that you want to do when making summer potato salad is clean your potatoes, no peeling necessary.
I prefer to use red skin potatoes. With a serving size of 1 potato per person. -
Step 2
After the potatoes are washed you can now cut each potato into sixths. If using small red potatoes just cut in half.
Add the cut potatoes to a large pot and fill with cold water. Use cold water so that the potatoes cook evenly.
Put the pot of water and potatoes on your stove top on medium to high heat for 20-25 minutes till tender.
Then drain the potatoes in a colander and return the potatoes back to the pot while you prepare the rest of the ingredients for the summer potato salad.. -
Step 3
Cut the tomatoes and set aside in a large bowl and slice the red onion.
Now add the tomatoes and red onion to the potatoes.
Season the vegetables with salt and pepper to taste. Also season the vegetables with dried oregano and parsley. Drizzle olive oil over the potato salad and toss. Now drizzle white vinegar over the salad as well and toss. -
Step 4
You can transfer the salad to your serving bowl, and this can be refrigerated for up to three days. Just toss and stir before serving.
