A sirloin tip roast can be cooked in a variety of ways, but roasting in foil or cooking in a Crock-Pot are two of the easiest methods. No matter which method you choose, your roast will be tender and juicy and perfect for you main course entrée. Preparation for either method is minimal and takes less than 10 minutes. Things You'll Need

  • 3- to 4-lb. beef sirloin tip roast
  • Shallow roasting pan or Crock-Pot
  • Heavy duty aluminum foil
  • Onion soup mix
  • Water
  • Canned or fresh mushrooms (optional)
  • Meat thermometer
  • Brown gravy mix

Instructions

  1. In the Oven

    • 1

      Lay a sheet of heavy duty foil into a shallow roasting pan. Make sure the sheet of aluminum foil is large enough to wrap around your roast completely.

      Lay the roast in the center of the foil sheet.

      Sprinkle the entire roast with onion soup mix. Add 1 cup of water and a can of mushrooms, if desired. Fresh, sliced mushrooms can be used if they are available.

      Wrap the aluminum foil tightly around the roast, making sure to seal any open edges by folding the foil over securely.

      Bake in a preheated 350-degree oven for 2 1/2 to 3 1/2 hours until the desired doneness is achieved. A meat thermometer reading 140 degrees is equivalent to medium rare meat and 170 degrees is well done.

      Remove the roast from the foil and place on a platter to carve.

      Pour the mushrooms and meat drippings into a saucepan and add one package of brown gravy mix and 1 cup water. Heat over medium high heat until thick.

    In a Crock-Pot

    • 8

      Place the roast in the Crock-Pot and turn the slow cooker on low.

      In a medium sized bowl, mix together one package of onion soup mix and one package of brown gravy mix. Add 2 cups water and stir until the mixture is well blended with no lumps.

      Pour the gravy mix over the roast in the Crock-Pot. Add a can of sliced mushrooms, if desired.

      Place the lid on the slow cooker and allow the roast to cook for 8 to 10 hours.

Tips & Warnings

  • Before cooking in a Crock-Pot, brown the roast in a hot skillet with several tablespoons of oil, if desired. This step is not necessary, but will give the slow cooked roast an oven roasted look.

  • Red wine can be substituted for the water in either method of cooking. The red wine will give the gravy a gourmet taste.

    Joel, you might substitute a Coke or Pepsi for the liquid, mix the onion soup mix and add 1/4 cup of mustard and 1/4 cup of catsup. Mix it all up together then pour it over the roast. It is amazing!! It also works perfect on flat cut brisket.

    Can you be a bit more specific in step 3 "add 1 cup of water"? Should it be applied to the top of the roast, i.e. mixed with the onion soup sprinkle? or just added to the foil around the roast, to "steam in" the dry stuff on top? Thanks, Joel
