How to Make Stuffing for Baked Lobster, Stuffed Mushrooms, or a Meal

This stuffing recipe makes enough for 4 baked lobsters, 20-30 stuffed mushrooms, or 4-6 side dishes for an entrée.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 large Vidalia onions
  • ½ celery stalk
  • 8 fresh garlic cloves
  • ¼ stick of butter
  • 3 tblspns of lemon juice
  • 1 lb green vegetables
  • 6 oz pkg stuffing mix
  • ¾ cup hot water
  • entrée of choice (optnl)
  1. Step 1

    Cut up two large Vidalia onions and half a celery stalk and boil until soft.

  2. Step 2

    Mince the garlic cloves.

  3. Step 3

    For extra-healthy stuffing, add a pound of par-boiled green vegetable. Asparagus is always good with fish , but you can use broccoli, green or lima beans, carrots, snap peas, spinach or any combination. Another quick variation is a can of Cream of Asparagus soup or frozen asparagus.

  4. Step 4

    Pour a 6 oz package of dry seasoned bread stuffing mix into a bowl with ¼ stick of butter and mix together with ¾ cup of hot water to melt it. [If using the soup, add it now.]

    If you have to have Ritz crackers in your lobster stuffing, add that now too, just allow enough total liquid so the final mix isn’t dry.

    Next add the minced garlic and sprinkle the lemon juice around the edges and stir well.

    Finally, chop up the cooked asparagus, add in, and mix. The stuffing is ready.

    For an entrée, cover the bottom of a large frying pan with a skim of virgin Olive oil and add the mixture to it, on medium heat.

  9. Step 9

    Top the mixture with seafood sections, pre-cooked shrimp, lobster meat or Portobello mushroom, or any other chopped fish entrée and steam with a cover on for 8-10 minutes – or serve as a side dish with a steak or chicken entrée.

  10. Step 10

    One final mix and a sprinkle of cayenne pepper on top for zing just before serving.

Tips & Warnings
  • Add the veggies to the mix toward the end of cooking if you want them crisp – earlier if you want them softer.
  • Every vegetable adds a slightly different flavor and you’ll quickly find favorite variations you’ll want to serve frequently. If you have a crowd coming over, add all the veggies for more substance. Any size portions can be used and the end result is still nearly foolproof.
