How to Make Slowcooker Meatless Corn and Bean Chili

This tasty chili is great for cook outs, cold autumn evenings, campfire grub...you name it, this chili is made for any occasion!

Use your imagination to kick it up a notch or make it a sweet and spicy chili sensation! You can add meat such as ground turkey, beef, chunky leftover roast but the chili as listed is a great dish without the meat!

Serve with warm tortillas or cornbread and a crisp salad to make it a gut-stuffing meal!!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3 tbls Red wine
  • 1 tsp Extra virgin olive oil
  • 2 Medium onions, chopped
  • 4 Garlic cloves, minced
  • 2 Bell peppers (any color), chopped
  • 6 Roma tomatoes, chopped
  • 2 Cans (15 oz)kidney beans, drained
  • 1 1/2 C Broth
  • 1 Small can tomato paste
  • 1 1/2 C Frozen white corn kernels
  • 1 tsp Salt
  • 1 tsp Chili powder
  • 1/2 tsp Cumin
  • 1/2 tsp Crushed red pepper
  • 1/2 tsp Pepper
  • Tabasco or Tapatio to taste
  1. Step 1

    Heat wine and oil in large skillet over medium heat until hot. Add onions and garlic. Cook, while stirring, until onions are limp, slightly browned and tender.

  2. Step 2

    Transfer ingredients into a slow cooker.

  3. Step 3

    Add peppers, tomatoes, beans, broth, tomato paste, corn, salt, chili powder, crushed red peper, cumin and mix well.

  4. Step 4

    Prefered method for the most flavor infusion is to cover and cook on LOW for 6-8 hours however, if "company's coming" or ya just can't wait, it can be cooked on HIGH for 3-4 hours.

Tips & Warnings
  • Serve with sour cream, grated cheese, chopped onions, chips, etc.
