Instructions

    • 1

Preheat the oven to 300 degrees. Separate the yolks of four eggs and beat them thoroughly. Add 1 tsp. vanilla extract, 7 oz. milk, 9 oz heavy cream and stir thoroughly. Add 1 tsp. cinnamon, 1/2 tsp. ginger and 1/4 tsp. nutmeg, if desired. Unless you like a very pronounced spice taste do not add more than this to your mixture.

    • 2

Pour the mixture into small desert tins known as brulee dishes. Fill the dishes to the edges and bake them in the oven for 30 minutes. Do not overcook and do not expect the mixture to brown. It should remain the same color but it should appear to have become slightly more solid. Do not stir or disturb the custard mixture. Cool completely at room temperature and then place the brulee in the refrigerator for 30 minutes.

Switch recipes if you are lactose intolerant and need a dairy-free version. Use 1/4 cup nondairy milk and 14 oz. of coconut milk. Remove the eggs from this recipe. Mix the nondairy milk and 1/4 cup cornstarch. Set this aside. Heat the coconut milk, 1/2 cup sugar, 1/8 tsp. salt and your spice choices to boiling, then remove it from the heat and stir in 1 tsp. of vanilla extract. Wisk in the milk and cornstarch mixture. Fill the dessert dishes and after cooling for 10 minutes, refrigerate for four hours.

    • 4

Remove the brulee dishes from the refrigerator. Both dairy and nondairy versions will look the same. Spoon 2 tsp. granulated sugar on each dish. Shake the dishes slightly to spread the sugar crystals around. Follow the directions on your brulee torch for starting the flame. Apply a direct flame to each dish moving in a constant circular motion until the entire surface is brown, bubbly and crystallized. Let it cool for a few minutes and enjoy.

Tips & Warnings

  • If you don't have a brulee torch you can use your oven broiler to caramelize the dishes.

  • Add fresh fruits to the top of your dessert for extra flavor.
