Grilled chicken caesar salad is very popular but putting it in a wrap brings it to a whole new dimension. Beats the ordinary sandwich, is easy make plus kids love it too.

Perfect to pack in a picnic basket, makes a quick and easy pool-side lunch or even a different twist on that lunch you brown-bag to work.

Try it....you'll like it!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 6 ounces grilled chicken
  • romaine lettuce
  • small red onion
  • 4 tortillas (6-8 inch diameter)
  • 1/4 cup caesar dressing
  • 2 plum tomatoes cut into small pieces
  • Parmesan cheese
  1. Step 1

Take 6 to 8 leaves of romaine lettuce and wash thoroughly. Pat dry with paper towels or spin in a salad spinner to remove all moisture. Tear the romaine lettuce into small pieces. Place in a large bowl.

  2. Step 2

Cut a small red onion into minced size pieces and add to the romaine lettuce along with the parmesan cheese (approximately 2 tablespoons) and 1/4 cup of your favorite caesar dressing. Toss these ingredients together so that all the lettuce is evenly coated.

  3. Step 3

Take already grilled chicken and cut into bite size pieces. You can grill chicken yourself, use leftover or buy already pre-packaged such as Perdue short cuts.

  4. Step 4

Take a tortilla and spread the lettuce mixture evenly down the center of the tortilla and then top with chopped tomatoes and grilled chicken.

  5. Step 5

Fold up one end of the tortilla about 1" over the filling. Then fold the right and left sides of the tortilla over the folded end overlapping it all.

  6. Step 6

Secure with a toothpick if necessary

Tips & Warnings
  • Use low fat or fat free caesar dressing if you are counting calories
