Things You'll Need:
- 6 ounces grilled chicken
- romaine lettuce
- small red onion
- 4 tortillas (6-8 inch diameter)
- 1/4 cup caesar dressing
- 2 plum tomatoes cut into small pieces
- Parmesan cheese
-
Step 1
Take 6 to 8 leaves of romaine lettuce and wash thoroughly. Pat dry with paper towels or spin in a salad spinner to remove all moisture. Tear the romaine lettuce into small pieces. Place in a large bowl.
-
Step 2
Cut a small red onion into minced size pieces and add to the romaine lettuce along with the parmesan cheese (approximately 2 tablespoons) and 1/4 cup of your favorite caesar dressing. Toss these ingredients together so that all the lettuce is evenly coated.
-
Step 3
Take already grilled chicken and cut into bite size pieces. You can grill chicken yourself, use leftover or buy already pre-packaged such as Perdue short cuts.
-
Step 4
Take a tortilla and spread the lettuce mixture evenly down the center of the tortilla and then top with chopped tomatoes and grilled chicken.
-
Step 5
Fold up one end of the tortilla about 1" over the filling. Then fold the right and left sides of the tortilla over the folded end overlapping it all.
-
Step 6
Secure with a toothpick if necessary
