How to prepare Lazyman's Chicken Potpie

My family loves chicken potpie yet it can be so time consuming for me to prepare. Here is the lazyman's way to make chicken potpie.

Instructions

Things You'll Need:

  • Ingredients:
  • 1 1/2 pounds mashed potatoes - instant or fresh
  • 1 teaspoon of chopped garlic
  • 3 tablespoons of olive oil
  • 1 pound of chicken breast
  • 1/2 cup finely chopped onion
  • 1 cup frozen peas and carrots
  • 1 cup of corn
  • 1 tablespoon of honey mustard
  • 3 chicken bouillon cubes
  • 2 1/2 cups of water
  • 3 tablespoons of corn starch
  • salt & pepper
  • Equipment:
  • Medium saucepan
  • Medium fry-pan
  • large stirring spoon
  1. Step 1

    Cook fresh potatoes and garlic or make instant potatoes and garlic in saucepan.

  2. Step 2

    Using medium heat pour oil in fry-pan. Brown chicken on both sides. Remove from pan.

  3. Step 3

    Cut chicken into small bit size pieces and set aside.

  4. Step 4

    Add onion to fry-pan and cook them until almost translucent. Add 2 cups of water and 3 cubes of chicken bouillon and bring to a boil. Add peas, carrots and corn lower heat.

  5. Step 5

    In a cup with remaining 1/2 cup of water add 1 tablespoon of honey mustard and 3 tablespoons of corn starch. Stir and add to fry-pan. When liquid is thick, add chicken. Tun off heat.

  6. Step 6

    Mash the potatoes if you have made them from fresh potatoes. Place mashed potatoes in 4 - 6 small bowls.

  7. Step 7

    Make a hallow and spoon the chicken and vegetables mixture in the bowl. Serve with a salad and biscuits.
