How to Make Mississippi Mud Pie Cake

Mississippi Mud Pie Cake is a rich chocolate cake that has been in my family for years. I’m not sure where the recipe originally came from but never the less, it has been enjoyed by my family and hopefully will be enjoyed by yours. It also won “Best Cake” in my Brother and Dad’s Boy Scout cooking contest years ago. Mississippi Mud Pie Cake has been inspired by the muddy waters of the Mississippi River, and this is where you will find the challenge in this recipe. Depending on where you live, whether it is high altitude or low altitude, you may have to adjust the ingredients by adding a little more flour, water, and even adjusting how long you keep the cake in the oven. The cake should come out with a very moist consistency.

Instructions

Things You'll Need:

  • 2 cups & 2 tbsp flour
  • 1 ¾ cup sugar
  • ½ tsp salt
  • 1 ½ cup margarine
  • 8 tbsp cocoa
  • 1 cup water
  • 2 eggs
  • ½ cup buttermilk
  • 1 tsp baking soda
  • 2 tsp vanilla
  • 6 tbsp milk
  • 1 pound powdered sugar
  • ½ cup pecans or walnuts
  • Whipped cream
  1. Step 1

    In a large bowl sift together 2 cups and 2 tbsp flour, 1 ¾ cup sugar, and ½ tsp salt, and put aside.

  2. Step 2

    Bring to a boil 1 cup margarine, 4 tbsp cocoa, and 1 cup water.

  3. Step 3

    Beat together 2 eggs, ½ cup buttermilk, 1 tsp baking soda, and 1 tsp vanilla.

  4. Step 4

    Add boiled mixture to egg mixture. Add dry ingredients and pour into a large 12 x 8 or 13 x 9 pan.

  5. Step 5

    Bake for 20-25 minutes at 375 degrees. Fix topping while cake is baking.

  6. Step 6

    Topping: Boil ½ cup margarine, dash of salt, 1 tsp vanilla, 4 tbsp cocoa, and 6 tbsp milk. Make sure you are constantly stirring mixture so that you don’t get clumps and mixture doesn’t over-boil.

  7. Step 7

    Topping: Remove from heat and add 1 pound powdered sugar and ½ cup pecans or walnuts. Beat mixture until smooth. Cover topping mixture and set aside until cake has finished baking.

  8. Step 8

    When cake is done, remove from the oven and let it cool. Once the cake has cooled, pour the topping over the cake. Serve with whipped cream and enjoy!

Tips & Warnings
  • Don’t leave the cake in the oven too long. The cake is supposed to be extremely moist, even muddy like the Mississippi River.
  • When making the topping, keep watch as the milk is added because the mix can become clumpy if it’s not stirred continuously.
  • Once the topping is removed from the heat, immediately add the powdered sugar.
