Things You'll Need:
- salt or salt substitutes
- garlic
- pepper, black, red, white, multicolored or peppercorns
- spices such as sage, parsley, oregano, dill, and fennel seeds
- red wine vinegar or balsamic vinegar
- extra virgin olive oil
- disposable gloves

Step 1
All meat and poultry must be properly rinsed and dried. Trim if necessary fat from meat.

Making a dry rub for the meats will bring out the flavor it is an excellent choice for steaks and chicken. Dry rubs are a mixture of dried seasonings mixed with olive oil to form a paste. The paste is then rub on the meat and left to marinate. The ratio I use is one half teaspoon of your favorite spices (adjust the hot ones) to two tablespoons of oil. This cotes three to four pound chicken or four med beef steaks.

After your meat is rubbed and placed in a large baggie. Add onions cut in slices or rings add about one tablespoon of vinegar and marinate for at least one hour before cooking.
