Things You'll Need:
- Cake:
- 1 box of yellow cake mix
- 1 small box of instant vanilla pudding
- 1 1/3 cup of water
- 4 eggs
- 1/4 cup of vegetable oil
- 1 1/3 cup of flaked coconut
- 1 cup of chopped pecans Frosting:
- 8 oz cream cheese
- 1/2 stick of butter
- 1 tsp. vanilla
- 1 lb. box of powdered sugar

Step 1
Preheat oven at 350 degrees Fahrenheit.

Grease 3 9-inch round layer cake pans.

Mix the cake mix, instant pudding, water, eggs and oil in a large mixing bowl. Beat for 4 or 5 minutes on medium speed.

Fold in the coconut and pecans.

Pour the cake batter evenly into the 3 cake pans. Level the batter well so the layers will be even.

Bake for 35 minutes or until a toothpick comes out of the centers clean. These should be baked on an even rack.

Mix the frosting while the cake cools.

Mix all the frosting ingredients except the nuts. Blend until creamy.

Either fold the nuts in, sprinkle on top or if preferred they can be omitted.

Brush the crumbs of the cake layers and begin applying the frosting.

Lay one layer down and coat the top with frosting. Then add the second layer and coat with frosting. Finally place the top layer on and coat the top and down the sides all around the cake with frosting.
