Things You'll Need:
- 1 box of Lemon flavored cake mix
- 1 box of instant vanilla pudding
- 10oz of 7-UP
- 3/4 cup of vegetable oil
- 4 eggs
- 1 can crushed pineapple
- 1 1/2 cup sugar
- 2 eggs
- 1 stick of butter
- 2 tsp. all purpose flour
- 1 cup of coconut

Step 1
Preheat oven at 375 degrees Fahrenheit.

Grease a 9 X 13 cake pan.

Mix all the cake ingredients together and blend well: lemon cake mix, instant vanilla pudding, 7-Up, vegetable oil and the 4 eggs.
(If 7-Up is not available to you, substitute it with a lemon and lime caffeine free soda) -
Step 4
Mix until the cake batter is lump free. Then pour the cake batter evenly into the grease cake pan.

Bake for 40 minutes or until a toothpick comes out of the center of the cake clean.

Step 6
Mix the yummy frosting while the cake is cooling.

Step 7
Cook the pineapple, sugar, 2 eggs, butter and all purpose flour over low heat in a medium sauce pan.

Stir the icing while it cooks until it thickens.

Cool the icing and fold in the coconut.

Step 10
Spread the frosting on the cake.

Step 11
For added decoration, twirl lemon and lime peels on top of the cake. Coconut can be omitted from icing. If preferred this cake makes an excellent bundt cake! I've never tired this as a layer cake, and I think it would be a mess with this type of icing.
