Chicken satay is a delicious Thai food served on skewers and with a sweet, peanut butter dipping sauce. If you're feeling in the mood for an Oriental treat for dinner tonight, don't worry. This dish is easy and takes less than an hour to prep and cook. Now you can have freshly made chicken sesame satay at home anytime you'd like. Does this Spark an idea?

Things You'll Need

  • 1 cup rice wine vinegar
  • 1 cup creamy peanut butter
  • 1 cup soy sauce
  • 1/4 cup vegetable oil
  • Sesame oil (to taste)
  • 1/3 cup sugar
  • 2 tablespoons freshly grated ginger
  • 25 chicken tenders, halved on the bias
  • 1/2 cup chopped scallions plus 2 tablespoons, for garnish
  • 1/2 cup chopped cilantro leaves
  • 1/4 cup black sesame seeds, for garnish
  • 1 tablespoon cilantro, chopped for garnish
  • 6-inch bamboo skewers

Instructions

      Preheat the oven to 350 degrees Fahrenheit.

      Combine in a steel-bladed food processor, peanut butter, vinegar, vegetable oil, soy sauce, sesame oil, sugar and ginger and process until smooth.

      Coat the chicken tenders in 1 1/2 cup of the processed mixture by tossing in a bowl.

      Place chicken on a baking pan in a single layer for 30 minutes. Let them cool.

      Skewer each tender and garnish with sesame seeds and chopped herbs.

      Serve with remaining peanut sauce.
