Nothing is worse than just enough leftover turkey and stuffing in little plastic containers to clutter up the fridge, but not enough leftover turkey to make a full meal. One solution is to use leftover turkey and stuffing to make turkey croquet. Turkey croquet is so delicious, your family will beg for more. Best of all, this recipe takes less than 10 minutes, so you can make it for a filling lunch recipe or a fast dinner recipe. And it saves you money on your grocery bills because it squeezes yet another meal out of the roast turkey!

Instructions

Things You'll Need:

  • Half to one cup of finely diced cooked turkey
  • Half to one cup of cooked stuffing
  • One tablespoon bread crumbs
  • Quarter teaspoon (1/4) of poultry seasoning
  • One egg
  • Two tablespoons of vegetable oil
  • Skillet
  • Spatula
  • Plate
  • Paper towel
  • Bowl
  • Fork
  1. Step 1

    Dice the leftover turkey very fine. Place the finely diced leftover turkey into a bowl. Add the stuffing. Mix it up with the fork.

  2. Step 2

    Add the bread crumbs, poultry seasoning mix, and egg to the bowl. Mix the ingredients together with a fork. Mash the stuffing up if you have to in order to get it very fine.

  3. Step 3

    Heat two tablespoons of vegetable oil in a skillet. Be sure to have the kitchen exhaust fan on to take out the smoke and smells.

  4. Step 4

    When the oil is hot, you are ready to cook the croquet. With clean hands form the stuffing and leftover turkey mixture into balls, then gently pat it down into hamburger patty sized disks. Gently place them into the hot oil, being careful not to splatter yourself with the hot oil.

  5. Step 5

    Cook for just 1-2 minutes. Using the spatula, flip the croquet over. Cook the second side for 1-2 minutes. Place the cooked croquet onto a dish covered with a paper towel to blot up the extra grease. Turn off the stove.

  6. Step 6

    Serve warm turkey croquet on a bed of lettuce for an instant salad. Or cook up some chard of spinach with garlic and serve croquet and greens together for a delicious taste. Don't forget the ketchup too.

Tips & Warnings
  • If the mixture is too runny and doesn't hold together, add more bread crumbs. Stir it together until the consistency is right.
  • If the mixture is too dry, add shredded Parmesan or Romano cheese or a tiny drop of water until the consistency is right.
  • Always use cooked turkey! This recipes is great for the tiny slivers you can pull off the bones of a roast turkey. Very economical and helps you save money on grocery bills too by stretching that turkey into yet another meal, lunch or dinner.
  • Always work carefully around hot oil and NEVER leave cooking foods unattended.
  • If turkey is more than a week old after cooking, discard it - it may not be safe to eat.
