How to Make Giant German Pancakes

A simple recipe for fluffy German Pancakes in 20 minutes! These will be an instant hit at the breakfast table.

Instructions

Things You'll Need:

  • 6 eggs
  • 1 cup milk
  • 1 cup flour
  • 1/4 tsp. salt
  • 4 Tbsp. butter or margarine
  • Glass baking pan (or 2 pie pans)
  • Topping of choice
  1. Step 1

    Preheat your oven to 450 degrees.

  2. Step 2

    Beat the eggs, milk, flour and salt in a large mixing bowl. Stop mixing when the batter is fluffy and smooth, like a milkshake.

  3. Step 3

    Put the 4 tablespoons of butter in your glass baking pan (or put 2 Tbsp. butter in each pie pan). Place in the oven (the butter will melt while the oven preheats).

    *Note: These pancakes get very puffy sometimes. Make sure they have at least 5 inches to grow in the oven. You may have to reposition one of your oven racks.

  4. Step 4

    Once the oven reaches 450 degrees, pour the pancake batter evenly into the pan(s). Close the oven and bake for 17 to 20 minutes.

  5. Step 5

    When the end of baking time approaches, peek at the pancakes. They should be puffy around the edges of the pan(s) and more dense in the middle. The puffy edges should be golden brown. Once they look done, pull them out.

  6. Step 6

    Cut into even portions. Serve with butter, powdered sugar, fruit compote, fruit jam, or syrup.

Tips & Warnings
  • Know your oven - If it bakes quickly, check on the pancakes at 14 to 16 minutes.
  • For heartier pancakes, use 50/50 wheat flour.
  • You may also substitute goat's milk for a slightly saltier taste.

on 6/15/2009 @russlhenley: We call them "Pfannkuchen" in German. Absolutely delicious. There are many versions, often baked with the toppings, some of them with savory toppings. Great stuff.
