Whole Oats, delicious and nutritious!Mix 2 cups of whole oats with 1.5 tsp. baking powder, dash salt, and .5 cup whole wheat pastry flour. Keep it simple and put in blender.

A good blender can be used for many healthy recipes.Next, add 2 eggs, 1.5 cups buttermilk, 1 tsp. vanilla extract, 1 tbls. vegetable oil, and dash nutmeg. Blend all ingredients briefly until processed. Let sit for 10 minutes.

Electric griddles are fun and easy to cook with.Heat griddle or pan on medium heat. Use cooking spray instead of butter on the griddle. Pour pancake batter onto griddle to make pancakes. When bubbles start to emerge from pancakes, flip over for minute, and serve. Top with fresh fruit, honey, powdered sugar, margarine, or butter substitute for healthier choice.

If buttermilk is not available, it is fairly easy to make homemade for cooking purposes. For every 1 cup of regular milk add 1 teaspoon of lemon juice or white vinegar, mix and let sit in room temperature for 20 minutes. One can also add .25 cup plain yogurt to .75 cup milk, mix and let sit at room temperature for 20 minutes.
