How to Make Lemon Cake Icing
Lemon icing is a sugar-based lighter frosting that is often drizzled over a baked cake to add flavor. Icing usually is not spread completely over the cake but drizzled on the top and down the sides. It often gives the cake that extra, complementary flavor. Lemon icing goes well on vanilla cake, carrot cake, lemon and even chocolate. Does this Spark an idea?
Things You'll Need
- 2 cups of confectioner's sugar
- 2 or 3 lemons juiced or 1/3 cup fresh lemon juice or concentrate
- Cutting board
- Zester or grater
- Bowl
- Spoon
- Plate
- Measuring cup
- Knife

Assemble needed ingredients and equipment on the table or counter.

Take one lemon and grate 1 tsp. lemon peel using a grater or zester. Use one lemon for zest. This lemon rind should be grated on a plate. Cut the two or three lemons in half on the cutting board.

Squeeze the lemons into a medium-size empty bowl. Remove any seeds with a spoon from the liquid and discard. Pour the lemon concentrate into a measuring cup to make sure it is 1/3 cup. If using fresh lemon juice, pour liquid from bowl into measuring cup to check amount.

In the bowl mix the lemon juice with seeds removed. Add the two cups powdered sugar and 1 tsp. lemon zest. Using a spoon, mix the ingredients well until smooth.

Drizzle the ice icing over the cake evenly; let it drip down the sides. You can cover the the cake lightly or really put on as much as you would like.
