How to Cook a Filet Mignon Loin
Filet mignon is the most tender of steaks. It is also one of the most expensive when ordered in a restaurant. Although still high-priced, you can buy a whole beef loin and slice it up at home. Filet mignon is simple to prepare and quick to cook, usually taking less than a half hour. Does this Spark an idea?

- 2 filet mignon loins
- Olive oil
- ½ tsp. Black pepper
- Large onion
- 2 garlic cloves
- Iron skillet
- ¼ cup butter
- Tongs

Sit your filet mignon on a plate on the kitchen counter. Coat the back and front of your steaks with olive oil. Sprinkle black pepper on the front and back of your steaks. Keep them on the counter so they will come to room temperature--about 20 minutes--while you prepare and cook the garlic and onion.

Peel the onion and garlic cloves. You can use any kind of onion, but sweet onions such as Vidalia are better because they don't sting the eyes as much and have a sweeter taste. Dice the onion and garlic into small pieces.

Place the iron skillet on the stove and put the butter in it. Add the chopped onion and garlic to the skillet, and turn the burner to medium heat. Turn the oven on to 450 degrees.

Cook the vegetables in the skillet for 10 minutes. Stir often so they don't stick to the bottom of the pan and burn. The onions and garlic need to be soft and a light golden brown.

Remove the cooked onion and garlic from the skillet and put in a bowl. Wipe the skillet clean and sit it on the stove. Turn the burner to high heat to get the skillet very hot.

Lay the two steaks in the skillet, being careful not to burn yourself. Let the steaks cook for two minutes, then flip over with a pair of tongs and cook two more minutes. Using a fork to turn over a steak leaves holes in it and gives the meat more of a chance to dry out.

Put the cooked onion and garlic pieces on top of your steaks. Place the skillet in the oven for four to six minutes to finish cooking. Remove the skillet from the oven and place the steaks on plates. Serve and enjoy.
