Raclette cheese is a salted cow's milk cheese, originally from Switzerland but also produced in France and Germany. It is a semi-firm cheese that can be used in many recipes; traditionally, though, there is only one method for the consumption of raclette. Eating raclette traditionally is an outdoor affair, as it's cooked by a fire, but today there are electric grills that are used specifically for cooking raclette--meaning the process can be taken indoors. Things You'll Need

  • 200 g of raclette per person
  • Boiled potatoes
  • Pickles and sliced meats like prosciutto
  • Ground pepper
  • Paprika
  • White wine
  • Knife
  • Sticks or coals for a fire
  • Flat stone that's larger than the piece of raclette
  • One plate per person

Instructions

      Purchase part of a wheel of raclette, approximately 200 g per serving. Take the rind off of the raclette.

      Start a fire outside, and wait for it to die down. Boil the potatoes and set out any pickled side dishes and charcuterie, or sliced meats, on plates.

      Set the flat stone that is slightly larger than the raclette near the dying-down fire. Put the raclette on the stone.

      Scrape off the melting raclette with a knife. Scrape it onto people's plates, on top of the potatoes, and sprinkle some ground pepper and paprika over the melted raclette.

      Continue serving the melting raclette until it is gone.
