How to Make Leftover Turkey Soup

So the day after Thanksgiving when I was growing up my mom always made turkey soup. This is a wonderful way to make use of your leftover turkey, you can also use any vegetables that are leftover as well.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • leftover turkey carcass
  • 2 onions
  • 2 carrots
  • 3 stalks of celery
  • 1 bay leaf
  • 2 sprigs thyme
  • 2 cloves garlic
  • 1 teaspoon peppercorn
  • 1 lb leftover turkey meet diced or shredded
  • 2 cups corn
  • 2 cups peas
  • 1 cup rice
  • salt and pepper to taste
  1. Step 1

    To start your turkey soup in a large stock pot cover your bones with water and add the thyme, bay leaf, cloves garlic and pepper corn to the water. Bring to a boil and reduce to a simmer.

  2. Step 2

    Dice half of the carrots, celery and onion into 1/2 inch dice and add to the simmering stock a half hour into the cooking process. Continue cooking for another hour and a half skimming often.

  3. Step 3

    Strain the bones and vegetables out of the stock. You now have a classic turkey stock for the base of your soup.

  4. Step 4

    Now return the stock to a stock pot. Dice the rest of the carrots, onions, and celery into 1/2 inch dice and add them to the stock along with the rice and turkey meet. Bring to a boil and reduce to a simmer. Simmer for a half hour or until the rice is tender.

  5. Step 5

    Add the corn and the peas and simmer another 5 minutes. Then season with salt and pepper. You will be amazed how fresh the soup tastes when you make your own stock.
