Protein pancakes are a great alternative to eggs, which can get pretty boring when you're on a low carb, high protein diet. Fortunately, they don't take much longer to prepare than those boring old eggs do, and you can make them in any flavor you like.

Difficulty: Easy
Instructions

Things You'll Need:

  • 2 eggs
  • 2 scoops protein powder (any flavor you like)
  • small frying pan with lid
  • nonstick cooking spray
  • Walden Farms pancake syrup (optional)
  1. Step 1

In a small mixing bowl, break the two eggs and add to them the two scoops of protein powder. Be sure that you're using a good tasting protein powder for best results. My personal favorite for this recipe is All The Whey's chocolate protein powder.

  2. Step 2

Whip the eggs with the protein powder until you have a batter of uniform color and texture.

  3. Step 3

Heat up a small frying pan on the stove and spray it with nonstick cooking spray.

  4. Step 4

Once the frying pan is hot, set the heat to low and pour the protein pancake batter into the pan. Use the back of a spoon to spread it around, it should cover the entire bottom of the pan.

  5. Step 5

Make sure that the heat is on low and cover the frying pan with the lid. Let the pancake cook for about 2 minutes, checking the underside occasionally to make sure that it doesn't burn.

  6. Step 6

Carefully flip the pancake with a spatula and recover to cook the other side the same way.

  7. Step 7

You can eat the pancake plain, or add some Walden Farms pancake syrup. This syrup is calorie free and actually quite good. If you can't find it in your area, then you can order some off of their website. I found that my local Albertson's carries Walden Farms products in the health food section.
