Banana bread is delicious and easy to make, and in warmer weather, bananas ripen quick. Do not throw those bananas out. Make banana bread-healthy banana bread using whole wheat pastry flour instead of white flour. Whole wheat is far healthier than processed white flour which has been stripped of any natural nutrition. Here is a great recipe.

Instructions

Things You'll Need:

  • 2 ripe bananas
  • 2 cups whole wheat pastry flour
  • 4 tsp brown sugar
  • 1 tsp vanilla extract
  • 1 egg, tsp cinnamon, 1/2 tsp salt, 2 1/2 tsp baking soda
  • 1/2 cup milk
  1. Step 1

    Preheat the oven to 350 degrees. Mix the whole wheat pastry flour, brown sugar, cinnamon, salt, baking soda together in a bowl.

    Mix egg, milk, vanilla extract, and 2 mashed ripe bananas together in a large bowl. Stir in dry mixture and stir until complete mixture is mixed but still a bit lumpy. If you wish, you can add one cup of raisens, or one cup mini chocolate chips, or one cup chopped walnuts for variation.

  3. Step 3
     

    Pour mixture into non-stick loaf pan which has been lightly sprayed with spray cooking oil like Pam. Bake in oven for about 45 minutes or until cooked (place sharp knife or toothpick in center to see if bread is done--no bread dough should be sticking). Let cool off and serve. Enjoy this healthy version of banana bread.
