It can be hard to get young children to eat healthy. Many of the most healthful vegetables that are high in fiber and vitamins also have pungent flavors, tastes that many adults love and kids many loathe. This easy recipe for batter fried broccoli and cauliflower is much healthier than either fries or chips -- and best of all, your kids will like it. This will make enough batter for 15 to 20 bite-size pieces.

Things You'll Need

  • Corn, peanut or vegetable oil
  • Flour
  • Milk
  • 1 or 2 eggs
  • Salt and pepper to taste
  • Finely shredded cheese (optional)

      Combine 3/4 cup flour, 3/4 cup milk and 1 egg in a mixing bowl.

      Cut up broccoli and cauliflower florets into bite size pieces. An entire medium head will make about 30 to 40 pieces, so you can use half a head of to make a single batch one day, and save the other half for another meal.

      Stir the broccoli and cauliflower pieces into the batter. Make sure batter fills all the spaces between the floret stems.

      Heat up a maximum of 2 inches of oil in a saucepan. When the oil is hot enough, drop in batter dipped pieces and let them fry for about five minutes, until golden brown.

      Dry the excess oil off the pieces with a paper towel and serve hot.

Tips & Warnings

  • You can double the recipe as needed. If you want thinner or thicker batter, add a little more flour or water.

  • To make cheesy broccoli bites, add no more than 1/2 cup very finely shredded cheese to the batter.

  • Save time by purchasing cut broccoli or cauliflower.
