How to make a upside down strawberry shortcake

Instructions

Things You'll Need:

  • 1 cup miniature marshmallows
  • 1 (16) ounce package of frozen sweetened sliced strawberries, thawed
  • 1 (3 )ounce package strawberry gelatin
  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • fresh strawberries
  • whipped cream
  1. Step 1

    I found a tasty twist to one of those summertime favorite desserts. My kids loves strawberries but would always leave the cake on the plate. So I came up with this recipe. You begin by greasing a 13 in. x 9 in. x 2 in. cake pan. Then you sprinkle your marshmallows in the bottom of the pan. Then set aside the pan for the time being. In a bowl you will combine the thawed strawberries and the gelatin. Then in a mixing bowl you will cream the shortening and the sugar. Then you add the eggs one at a time. Beat this mixture well after you add each egg. Then beat in the teaspoon of vanilla.

  2. Step 2

    In another bowl you will combine the flour, baking powder and salt. You will then combine this with your shortening and sugar mixture. Mix your milk into this mixture at this time. Pour this mixture over the marshmallows in your cake pan. Then you will spoon the strawberry mixture over top of your batter.

  3. Step 3

    You will then bake your cake at 350 degrees for 45 to 50 minutes or until a toothpick inserted in the middle of the cake comes out clean. You will then place the cake on a wire rack to cool. After it has completely cooled cut the cake into squares approximately 12 to 16 pieces. You will garnish with fresh strawberries and whipped cream.
