How to Prepare Dinner Ahead and Freeze

Making frozen dinners is an easy way to prepare a quick weeknight dinner. Making large batches of a recipe and freezing individual portions is also economical. Frozen meals are wonderful for when unexpected guests show up for dinner. The process to prepare and freeze meals is one that is easy to learn.

Instructions
  1. Step 1

    Prepare a recipe that is suited to freezing. Casseroles, soups, stews and chili recipes all do well when frozen and thawed. Make large batches to also save time.

  2. Step 2

    Cook the recipe according to instructions.

  3. Step 3

    Chill the food. To keep food safe, chill quickly before placing in the freezer. Using the refrigerator is the best resource for cooling casseroles. Chill soups by placing the pot in an ice bath.

  4. Step 4

    Skim the fat off the top of the dish. Storing fat will shorten the frozen shelf life of the dish.

  5. Step 5

    Package food for the freezer. Using resealable plastic bags works well. Remove all air from the bags before placing in the freezer. If using plastic containers, fill almost to the top. Allow a bit of space for expansion when freezing.

  6. Step 6

    Store in small serving sizes. This insures freezing time will be decreased and small amounts can be thawed at a time for use.

  7. Step 7

    Label the container. Include the name of the dish and the date.

  8. Step 8

    Place the food in the freezer. Most items will safely last in the freezer for two or three months.

  9. Step 9

    To thaw, remove from freezer and place in the refrigerator. For a dinner meal, remove from the freezer in the morning or evening before.
