Things You'll Need

  • 2 baking sheets (12-by-18 inch minimum)
  • Confectioner's sugar
  • Butter
  • Large pot
  • 8 cups granulated sugar
  • 3 1/2 cups light corn syrup
  • 2 cups water
  • Candy thermometer
  • Bakery brush
  • Rubber spatula
  • Medium pot
  • 2 tbsp. flavored extract (your choice)
  • 2 tbsp. food coloring (your choice)
  • Kitchen mallet
  • Airtight storage containers

      Grease two baking sheets with butter and then thoroughly dust them, bottom and sides, with confectioner's sugar. Set them aside.

      Combine 2 cups of water, 3 1/2 cups of light corn syrup and 8 cups of granulated sugar in a large pot. Cook over medium heat, stirring constantly, until the sugar is dissolved. Using a bakery brush dipped in cold water, brush any granules from the sides of the pot as you continue to stir.

      Raise the heat to high and allow the mixture to come to a boil. Let it boil until the candy thermometer reaches 300 degrees Fahrenheit. Immediately remove the mixture from the heat.

      Pour half of the mixture into a medium pot. You must work quickly before the mixture begins to harden. In one pot, add 1 tbsp. each of your choice of flavored extract and food coloring. You may add more food coloring if desired to achieve the desired color. Stir well.

      Pour one pot of mixture into the first baking sheet, using a rubber spatula to scrape the sides of the pot. Pour the other pot of mixture into the second baking sheet, again scraping the sides with the spatula.

      Allow the mixture to cool until completely hard. To speed up cooling, you may place it in the refrigerator for approximately 1 hour.

      Crack the hardened candy into pieces with a kitchen mallet. Store the candy in airtight containers.

Tips & Warnings

  • As you finish with each pot and utensil, immediately place it in hot, soapy water so that the candy will not harden on it. For a party or holiday gathering, try filling a colored glass bowl with your stained glass candy for an eye-catching treat.

  • Be careful when working with the boiling candy mixture, it will be EXTREMELY HOT.
