Things You'll Need:
- skewers
- chicken
- veggies of choice
-
Step 1
I actually got this recipe out of an old microwave cookbook. I use the recipe for a marinade and then cook the kabobs on the grill. Ive modified the recipe just a little.
-
Step 2
3 uncooked chicken breasts thawed
1/4 cup soy sauce
2 teaspoons sugar
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon ginger
1/8 teaspoon pepper
2 tablespoons honey
pineapple juice from can of pineapples
veggies of choice cut up into bite sized pieces
mushrooms
peppers
onions
tomatoes
cucumber
eggplant
zucchini
pineapple chunks -
Step 3
Place veggies and chicken in a bag with sauce mixture for 1 hour. You can do it for 30 minutes if you are in a hurry. The longer it sits the better it tastes.
-
Step 4
Alternate chicken and veggies on skewers and place them on grill to cook. Turn them about every 5 minutes until chicken is done.
-
Step 5
Microwave the extra sauce to be sure all the raw chicken drippings are cooked and then use sauce for dipping.
-
Step 6
If you want to microwave skewers instead of grilling them make sure they are on wood skewers instead of metal. Place in microwave uncovered on high for 3 minutes. Take kabobs out and brush with sauce. Put back in for another 3 minutes.
-
Step 7
They are very good both ways but since summer is here I prefer the grilling method.
