Things You'll Need:
- Simply Potatoes Southwestern Style
- Egg Beaters
- Newman's Own Black Bean Salsa
- Fat Free Sour Cream
- Optional: Fat Free or Low Fat Cheddar Cheese
- Optional: Black Olives
- Optional: Avocado

Step 1
Start by spraying a non-stick skillet with Pam spray. Pour in your desired amount of potatoes and heat on high heat, flipping occasionally for about five minutes.

Next pour around a cup of egg beaters into the pan and fold into the potatoes. Season with salt and pepper and flip the mixture occasionally.

Once completely cooked, take a spatula and transfer the mixture to a large plate or bowl.

At this point you can start adding your toppings. To keep the recipe fat free, you can top with Newman's Own black bean salsa and fat free sour cream. Other optional fat free toppings include freshly cut onion, freshly cut tomatoes, fresh cilantro and black olives. If you want fresh avocado it will add a small amount of fat. You may also want to add a low fat or fat free cheese. If so, put the cheese on first so that it will melt.
