Things You'll Need:
- 9-by-13-inch baking sheet
- Vegetable oil
- 4 large sweet potatoes
- Sharp kitchen knife
- Pepper
- Salt
- Dipping sauce (optional)
- Covered container (optional)

Step 1
Preheat the oven to 400 degrees F. Lightly grease a 9-by-13-inch baking sheet with rimmed edges using vegetable oil.

Thoroughly scrub each sweet potato in running water to remove any dirt. Cut each sweet potato into quarters lengthwise using a sharp kitchen knife. Cut each quartered piece into three or four large spears.

Place the sweet potato fries with the skin side down onto the prepared baking sheet. Drizzle them with approximately 3 tablespoons of vegetable oil, and then sprinkle with pepper and salt.

Place the baking sheet in the oven and bake for 30 to 45 minutes, or until they are thoroughly cooked. Check the the fries by sticking a fork or knife into the thickest part. If it is easily penetrated, the fries are done.

Remove the pan from the oven, and serve immediately with ketchup, yogurt or your favorite dipping sauce. Store leftovers in a covered container in the refrigerator, and reheat in the oven at 400 degrees F for 10 to 15 minutes, or until heated through.
