Instructions

    • 1

Mix up the muffin batter according to the recipe. Line a pan with muffin liners and fill each muffin 2/3 full with batter.

    • 2

Place a kitchen towel over the muffin pan and place it in the microwave.

    • 3

Set the microwave to bake at 60 to 70-percent power. To bake six muffins, set the microwave for 1 to 1 1/2 minutes. Rotate the muffin pan at the half-way point.

Allow the muffins to stand for several minutes after baking--they will continue to cook. Check the muffins to see if they are done by inserting a toothpick into the center of a muffin. If the toothpick comes out clean, the muffins are done. If the toothpick is covered in moist batter, the muffins are not done. Return the muffins to the microwave, cover them with a kitchen towel and cook for another 20 seconds. Let the muffins sit, then check them with the toothpick.

Tips & Warnings

  • If you cook the muffins in the microwave until they are set inside, they will continue to cook during the standing time and will become overcooked and dry.
