Step 1
Clean food items by rinsing under a stream of cool tap water. Remove pits, cores, inedible stems and blemishes from fruit and vegetables. Trim excess fat from meat.

Place each New Era cookware pan on an individual burner. Add 1/4-inch water to the bottom of the largest pans to cook meat or dense starchy vegetables such as potatoes and squash. Use only 2 or 3 tbsp. of water in saucepans to cook vegetables and fruit.

Set meat in the largest pan. Place vegetables and fruit in medium and smaller size saucepans. Add half the salt, pepper or other herbs and spices you typically use for flavor enhancement. Food cooked in New Era cookware will hold flavors with a higher intensity than other cooking methods, so season lightly.

Step 4
Place the cover on the pan. Turn the burner to medium, no higher. Listen for the pan steam valve to whistle, then close the valve and turn the burner heat down to the lowest setting possible.

Step 5
Remove each pan from the burner when the food is cooked through. Meat typically takes 40 to 50 minutes, while vegetables take as little as 10 to 15 minutes. Follow the timing guidelines provided by the manufacturer with each New Era cookware pan.

Step 6
Release the vacuum valve slowly after the pan cools for 5 minutes. Lift the lid away from you to allow any remaining hot steam to escape. Spoon the food out onto serving platters and drizzle with any liquid remaining in the pan.
