- Bacon
- Onion
- Spinach
- Eggs
- Milk

Step 1
Fry 3-4 Bacon stripsFry about 3-4 strips of bacon with 1/4 cup of diced onion. Remove when bacon is almost crispy; cool, crumble and set aside. Add around 3-4 ounces of spinach to the bacon fat, cook and stir until the spinach is wilted; drain on a paper towel.

Whisk 4 eggsWhisk 4 eggs with 1/4 cup of milk until well blended. Pour the egg mixture into a medium preheated non-stick skillet, sprayed lightly with a cooking spray. Keep tilting the skillet to ensure even coverage.

Slowly slide it onto a plateCook while lifting the edges of the omelet with a spatula as the egg sets to let the uncooked egg to flow underneath.
When the omelet is almost set, place the spinach-onion mixture on one half of the omelet and sprinkle 1/4 cup of cheddar cheese on the spinach. Cook until the cheese melts. With the spatula, carefully fold over the omelet. Slowly slide it onto a plate and top with the crumbled bacon; cut in two. Serve immediately. Serves two people.
